Local Chefs Head to 2023 World Food Championships

Winners from the Show Me Series Route 66 Hogs & Frogs cooking competition on September 23, 2023, are headed to the World Food Championships November 8-12, 2023, in Dallas, Texas.

The World Food Championships (WFC) is the highest stakes Food Sport competition in the world. This multi-day, live event, culinary competition showcases some of the world's best cooks who compete for food, fame, and fortune in 12 categories (Bacon, Barbecue, Burger, Chef, Cocktail, Dessert, Live Fire, Rice/Noodle, Sandwich, Seafood, Soup and Vegetarian). Qualifying tournaments  kick off in January and thousands of cook teams try to earn their way into the WFC by winning a Golden Ticket.   40 countries and every state in America have competed at WFC’s main event since its inception in 2012.

 

Representing Pulaski County will be Kimsha Rosensteel from Honey Chile’ PleaseMary Tromblee from Drachenfutterand Garrett Johnson (Dixon High School), Carson Clubb (Dixon High School), and Alexandria Holt (Waynesville High School) from Waynesville Career Center – Culinary Arts Program.  

Kimsha Rosensteel prepared Blackberry chipotle frog legs with cilantro lime rice and deep-fried frijoles. For the WFC, she will present a dish from southwestern China with bold flavors, pungency, and spice while using all authentic ingredients from that side of the globe in the Rice & Noodles category.

Kimsha shared that she prepares for the Championships by practice and time management. Time is limited to 90 minutes to complete.  She wants to make sure to execute the EAT standards of the competition and achieve as many points as possible to land back in the top 7.

When Kimsha is not creating culinary art, she enjoys going to home improvement stores  where she can get lost in the aisles, especially the garden shop due to her love of flowers. She does not cook much at home,  she indulges in the restaurants in the community and has favorite dishes from every establishment in town.

Mary Tromblee

Mary Tromblee prepared a candied maple bacon bourbon brownie, with candied maple bacon bourbon ice cream and a chocolate sauce. Mary shared, "My dish for the WFC will be in the Bacon category.  An “empty nester's holiday breakfast” featuring food that your kids would not think of, but you and your significant other want to try!" She does not want to give out any information about the ingredients, but her staff at Drachenfutter want to put this on the menu.  

When asked what she would do with the prize money if she should win, she would like to put the money into the business (i.e., the murals at the restaurant).

Garrett, Carson, and Alexandria are seniors and prepared a Southwest-Asian infused egg roll and wonton tacos, under the guidance of Chef John Dye, culinary arts instructor with the Waynesville Career Center Culinary Arts Program.

At the WFC, they will compete in the Bacon category; preparing bacon, pepper mix biscuit with a bacon and pepper mix quiche. They are preparing for the competition by practicing and finding out how to make the team run at maximum efficiency.  When asked their vision of the future holds, each student expressed they would like to run restaurants or find jobs in fine dining.
